Recipe: Turkey-Spinach Cheeseburgers

Turkey-Spinach Cheeseburgers

3/4 lb lean ground turkey breast
1 pkg (10 oz) frozen chopped spinach, thawed and squeezed dry
1/4 tsp kosher salt
1/8 tsp coarsely ground black pepper
1/8 tsp freshyl grated nutmeg
4 sesame buns, toasted
4 leaves Boston lettuce
1 roasted red pepper, quartered
4 thin slices part-skim mozzarella cheese

1. Coat grill or broiler rack with cooking spray; heat grill to medium-high for direct heat, or heat broiler.

2. In a large bowl, combine turkey, spinach, salt, pepper, and nutmeg. Shape into four 3 1/2" patties.

3. Grill or broil 10 minutes, turning once, or until meat thermometer inserted in the sides of the burgers registers 165 F.

4. Top each bun with a lettuce leaf; place burgers on top. Garnish with roasted pepper and cheese.

Makes 4 servings
Per serving: 285 calories, 30g protein, 25g carbs, 6g fat, 3g fiber
