Recipe(tried): Chicken Scampi ala BB

I am not familiar with Olive Garden's chicken scampi...but these are two
methods I use...I love Chicken and shrimp scampi so I took some recipes I found
off of the web and made my adjustments..hope they are similar...perhaps you can
give us more of a description of how Olive Garden makes theirs and others will
have recipes..Good Luck kathy!!

Chicken Scampi (2 methods)

2 tsp. olive oil
5 garlic cloves, minced (If you like less garlic you can adjust accordingly I
wouldn't go less than 3 though, it is an important part of the yummy flavor!)
2 -3 Whole chicken breasts; - boneless, cut 1" pieces
3 28oz cans Whole Tomatoes **
(drained and coarsely chopped)
1/2 cup Fresh Parsley (chopped) **
1 cup Feta Cheese (crumbled)**
Juice from 1 fresh lemon or 2 Tbls lemon juice (I have added more lemon juice
to taste...we love lemon!)
1/2 tsp. cracked Black Pepper

Heat oil in a large skillet over medium heat. Add garlic and saute 30 seconds.
Add tomatoes and 1/4 cup parsley then reduce heat, and simmer 10 minutes. Add
chicken, and cook 5 minutes or just until chicken is done.

Pour mixture into a 13 x 9-inch baking dish; sprinkle with cheese. Bake at 400F
for 10 minutes. Sprinkle with remaining parsley, lemon juice, and pepper.

**AN ALTERNATIVE METHOD would be to use 1/2 cup butter, 1/2 cup oil, add garlic
and saute approx. 2 minutes; add the chicken and 1/4 cup fresh chopped parsley;
saute until golden. Season with salt and pepper, sprinkle with lemon juice and
cook 2 minutes.
You can also saute a red pepper (cut in small strips) and add if you would
like.

I serve over angel hair pasta cooked al dente! Hope you enjoy!!
