DELICIOUS HEART HEALTHY
FISH FROM THE MICROWAVE
1 tbsp. finely chopped onion
1/2 tablespoon minced garlic
1 tsp. olive oil
1 lb. fish fillets
8 oz. sliced fresh mushrooms
2 tomatoes, coarsely chopped (or use canned)
1/2 tsp. dried thyme
1/2 tsp. salt
1/8 tsp. pepper
2 tsp. bread crumbs
In 9 inch square microwavable dish, combine onion, garlic, and oil. Microwave on high for 1 minute.
Place fish on top of onion mixture. Place mushrooms, tomatoes, thyme, salt and pepper on top of fish. Sprinkle with bread crumbs. Cover with waxed paper.
Microwave on high until fish flakes easily with a fork (about 4-5 minutes).
Servings: 2
