CHINESE SALAD
1 Bag Bean Sprouts
1 Bag spinach, torn in pieces
1 cup cooked long grain rice
2 bell green peppers, cubed
2 bell red peppers, cubed
2 bell yellow peppers cubed
1 (8 oz.) pkg. mushrooms, sliced or cubed
1 cup raisins
2 bundles green onions, chopped
5 celery ribs, sliced 1/4" thick
cashews (as many as you like) -I use alot
DRESSING
1 cup good vegetable oil
1/4 cup Worcestershire sauce
1/3 cup good Soy Sauce
1 Tbsp. garlic, minced
Put all but the cashews in a large bowl and toss well.
Mix the dressing ingredients and keep in fridge until ready to serve. (I make it the day before sometimes) Makes a lot of salad, so add dressing to what you are serving, keeping the rest for the balance of the salad when you serve it. (Gets too soggy if done ahead)
When ready to serve, add dressing and toss again. Sprinkle cashews over the top of the salad and serve.
DO NOT ADD DRESSING UNTIL READY TO SERVE.
