Recipe: Chipotle Mushroom Steak and Broccoli Cheddar Toss (serves 2)
MenusCHIPOTLE MUSHROOM STEAK
Servings: 2
2 (10-ounce) boneless N.Y. strip steaks,
salt & pepper
olive oil
1/2 cup chicken stock
1/4 cup onions, minced
4 ounces Cremini mushrooms, sliced
2 cloves garlic, minced
1 teaspoon adobo sauce, from canned chipotles
1 tablespoon dry sherry
Remove the steaks from the refrigerator about an hour before cooking.
Heat a large saute pan over medium-high heat with about a tablespoon of olive oil. Sprinkle salt and pepper on each side of the two steaks. When the pan is hot, put in the steaks and cook over medium heat for 4 minutes on each side; test for doneness. The internal temperature should be at least 120 degrees for rare or 130 degrees for medium-rare.
When the steaks are cooked to perfection, let them rest for 5-10 minutes while preparing a quick sauce.
Pour some chicken stock into the pan, scraping up the browned bits with a wooden spoon, and boil this for a few minutes over medium-low heat. Pour this flavorful liquid through a strainer into a cup.
Begin to saute the onions in a teaspoon of olive oil. After a few minutes, add some mushrooms and cook until they have released their juices and are nicely browned. Season with salt and pepper and then add the garlic and adobo sauce and saute for a minute. Add the sherry.
After boiling it for a minute, add the deglazing liquid, and then any jus (juice) accumulated on the plate the meat is resting on. Heat on low for a few minutes, adjusting the seasoning to taste.
Serve the steaks with the chipotle mushroom sauce on top.
BROCCOLI CHEDDAR TOSS
3 cups broccoli florets
1/2 cup shredded Cheddar cheese
1/3 cup raisins
1/4 cup chopped red onion
DRESSING:
1/2 cup mayonnaise
2 tablespoons sugar
2 teaspoons lemon juice
In a large bowl, combine the broccoli, cheese, raisins and onion.
In a small bowl, combine dressing ingredients; mix well. Pour dressing over salad; toss well to combine.
Chill until 15 minutes before serving.
