Chocolate Sugar Cookies (one-bowl recipe)

Makes about 3 1/2 dozen
I just tried this recipe and it came out great, even though I am a lousy cook, so it must be fool-proof! :-) They are crunchy and the tops crack during baking--delicious! I'm considering making the next batch with less sugar--these are pretty sweet, even for me.
3 squares Baker's Unsweetened Chocolate
1 cup (2 sticks) butter
1 cup sugar
1 egg
1 teaspoon vanilla
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
Additional sugar
Microwave chocolate and butter in large microwavable bowl until butter is melted (I use 2 min. @ 50% power). Stir until chocolate is completely melted.
Stir 1 cup sugar into melted chocolate mixture until well blended. Stir in egg and vanilla until completely mixed. Mix in flour, baking soda, and salt. Refrigerate 30 min.
Heat oven to 375F. Shape dough in 1-inch balls; roll in additional sugar. Place on ungreased cookie sheets.
Bake for 8-10 min. or until set. Remove from cookie sheets to cool on wire racks.
