CHOCOLATE TRUFFLES
1/2 cup heavy cream
1/4 cup butter
8 oz bittersweet chocolate, chopped
1/2 tsp vanilla extract
red, green and white nonpareils (or any colors you desire)
In a pot over low heat bring cream and butter to a simmer.
Remove from heat and add chocolate. Let sit 2 minutes.
Add vanilla then stir until smooth. Transfer to a small bowl. Freeze until set but still soft (about 2 hours).
Form into balls 1 Tbsp each and roll in nonpareils. Refrigerate.
Makes 18
