Chunky Peanut Butter Overload
Source: Robin Hood Flour - Quick and Easy Baking Recipes Baking Festival 2002
Yield: 2 1/2 dozen
1 cup all Purpose Flour
1/2 tsp baking soda
1/4 tsp salt
2/3 cup vegetable shortening
1/2 cup creamy peanut butter
2/3 cup packed brown sugar
1 egg
1 cup white chocolate chips
1 cup chopped pecans
Combine flour, baking soda and salt.
Beat shortening, peanut butter, sugar and egg in large mixer bowl on medium speed until light and creamy, about 4 minutes.
Stir in flour mixture, baking chips and pecans. Mix well. Drop dough by spoonfuls onto ungreased baking sheets.
Bake at 375F for 8-10 minutes or until light golden. Cool 10 minutes, then remove to rack to cool completely.
TIP: Semi-sweet and milk chocolate baking chips, almonds and walnuts all work well.
