Corn Fritters

Yield: 16
1 egg
4-6 tablespoons flour
3 tablespoons corn meal
1/4 teaspoon baking powder
1 teaspoon salt
1/4 teaspoon black pepper
2 1/2 cups cooked whole kernel corn
vegetable oil for frying
Beat egg well. Add flour, corn meal, baking powder, and seasonings. Stir in cooked, fresh or frozen corn. Add enough flour to make a medium batter. Drop by tablespoonfuls into hot oil. Fry to a golden brown on each side. Drain on absorbent paper towels and serve warm.
