Cornbread Dressing

For the Cornbread:
2 cups self-rising flour
1 cup white cornmeal
1 cup white/yellow cornmeal
2 cups buttermilk
3 large eggs
1/2 cup butter/margarine, melted
Vegetable cooking spray for pan
For the Dressing:
1 cup chopped celery
1-2 medium onions, chopped
1/4 teaspoon pepper
2 to 3 cups chicken broth
Poultry seasoning to taste
Paprika
Garnish with celery leaves
Combine flour and cornmeal in a large bowl and make a well in the center.
Combine buttermilk, eggs and butter, stirring well, add to dry ingredients, stirring until moistened.
Place a 9-inch square baking pan in a 400 degree oven for 5 minutes or until hot. Remove pan from oven and coat with cooking spray. Spoon batter into hot baking pan. Bake at 400 degrees for 25 minutes or until lightly browned. Cool in pan on a wire rack.
Crumble cooled cornbread into a large bowl. Add celery and next 3 ingredients, stirring well. Stir in enough broth to make a moist, thick mixture. Spoon into a baking dish coated with vegetable spray. Bake at 350 degrees for 20 minutes or until lightly browned. Sprinkle with paprika and garnish.
