Recipe: Cranberry Nut Cheese Ball (with walnuts and ginger, served with vanilla wafers)

CRANBERRY NUT CHEESE BALL

1/2 cup plus 2 tbsp. dried cranberries
1/2 cup plus 2 tbsp. finely chopped walnuts
1 tsp. ground ginger
1 (8 oz.) pkg. cream cheese, softened
vanilla wafers (to serve)

In a small bowl combine cranberries, walnuts and ginger. Combine cranberry mixture with cream cheese. Shape into ball, wrap in plastic wrap and refrigerate until firm.

To serve, let stand at room temperature 20 to 30 minutes or until softened. Serve with vanilla wafers.

Makes 1 cheese ball
