COCOALIGHT CAKE
2 cups sifted flour
2 cups sugar
3/4 cup Crisco shortening
1 tsp salt
2/3 cup unsweetened cocoa powder
3/4 cup milk
1 tsp baking soda
1/2 tsp baking powder
1/2 cup milk
3 eggs, unbeaten
1 tsp vanilla
Measure first 6 ingredients into a mixing bowl. Beat vigorously by hand or with an electric mixer (at medium speed) for 2 minutes. Stir in baking soda and baking powder.Add remaining milk, eggs and vanilla. Pour into two greased (9-inch) layer pans.
Bake at 350 degrees F for 30 minutes. Loosen edges with spatula; invert onto racks to cool. Frost as desired.

Ever since karyn, ny asked about a Crisco Chocolate Cake recipe, I have been wracking my brain, trying to remember exactly what the name of the cake was. It was my mother's very favorite cake and she made it frequently. While going thru old recipes the other day, (looking for "Sailors Steak Stew" from the Boston Globe) I found the recipe for the cake! I had passed it on to all our children...labeled "Nana's Chocolate Cake". Maybe this recipe will click with karyn.
