Crunchy Baked Chicken
Serves 2
Crunchy, munchy chicken for your outdoor expedition.
2 chicken quarters
2 rounded tablespoons cornflour
1 medium packet potato crisps
evaporated milk
Pre-heat oven to 350F, Gas Mark 4, 180C. Rub the chicken quarters all over with salt. Crush the potato crisps with a rolling pin on a sheet of greaseproof paper. Dip the chicken quarters in the evaporated milk then coat evenly with the potato crisp crumbs. Place skin side up on a baking sheet and cook in the pre-heated oven for 40-45 minutes. Leave on kitchen paper to cool. Carry in plastic container to your picnic.
