Salmon Pie
Serves 3-4
A delicious addition to your picnic hamper that will go down a treat.
8 oz. (225g) can of salmon
8 oz. (225g) flaky pastry
11 oz. (300g) can of condensed mushroom soup
salt
pinch of cayenne pepper
1 tablespoon of chopped parsley
1 tablespoon of lemon juice
beaten egg to glaze
Pre-heat oven to 450F, Gas Mark 7. Line an 8 inch (22cm.) pie plate with rather more than half the pastry rolled thinly. Flake the salmon, removing any black skin and bones. Add parsley, salt, lemon juice and cayenne pepper. Add the mushroom soup and mix well. Pour the mixture ito the pastry case, damp the edges of the pastry and cover with the remaining pastry. Press edges together and knock up with the back of a knife. Brush with the beaten egg score the top and place in the pre-heated oven for35-40 minutes.
