Cucumber and Onion Salad
Yield : 4 (1 cup) servings

4 c thinly sliced unpeeled cucumber
1 c thinly sliced onion
1/2 tsp salt

1/3 cup nonfat sour cream
2 tbsp rice wine vinegar
1 tsp dried whole dill weed
1/2 cup thinly sliced radish

Combine first 3 ingredients in a bowl. Let stand 30 minutes. Drain and pat dry with paper towels.

Combine sour cream, vinegar, and dill weed in a bowl, stirring until smooth. Add cucumber mixture and radish; toss gently. Cover and chill 1 hour. Source: unknown
