Cucumber Dressing
Recipe by: Betty Crocker

1 cup cucumber; finely chopped; seeded and peeled
1/2 cup plain nonfat yogurt
1/2 tsp grated lime rind
2 tbsp chives; chopped fresh
2 tbsp lime juice
1 tbsp low-fat sour cream
1/4 tsp pepper

Mix all ingredients with a fork or wire whisk.
