Recipe: Spinach, Corn and Feta Salad

Considering this one as my dish for Sunday at our Mother's Day gathering:

Spinach, Corn and Feta Salad

1/2 cup orange juice
2 tablespoons extra-virgin olive oil
2 teaspoons Dijon mustard
1/4 teaspoon salt
6 cups fresh spinach leaves
2 cups halved, seedless red grapes (12 ounces)
2 cups corn kernels (12 ounces)
1 1/2 cups diced orange or red bell pepper
1/4 cup diced red onion
4 ounces crumbled feta cheese

1. In a large bowl, whisk together orange juice, oil, mustard, and salt.

2. Add spinach, grapes, corn, bell pepper, and onion and toss to combine. Add feta and
toss again.
