Recipe: Cucumber Jam

Cucumber Jam

4 lb. cucumber
4 lb. sugar
2 lemons
Root Ginger

Extract the juice from the lemons and set aside. Place the Lemon rind plus pith plus 1/2 oz Ginger into a muslin bag. Peel and slice cucumber and place into pan with muslin bag. Cook gently to produce a medium pulp. Add sugar and juice. When sugar has dissolved bring to rapid boil until setting point is reached. Pour into sterilized jars and seal. Process in water bath canner for 10 minutes.
