Recipe: Soft Strawberry Jam

Soft Strawberry Jam

Makes 8 - 9 jars

This version of a Canadian favorite is one of the best. The consistency is a natural, slightly runny on that people brought up on pectin jams may find unusual. It's a good idea to bottle this jam in 8 oz jars and process in a boiling water canner for 10 minutes to ensure good storage though the humid summer

12 cups sliced strawberries
8 cups granulated sugar
1/4 cup lemon juice

Wash and sterilize 9 8oz preserving jars.

Place berries in large preserving kettle and slowly bring to a boil; add sugar and lemon juice and boil 10 - 12 minutes or until slightly thickened.

Remove from heat, skim off foam, and stir for 5 minutes to evenly distribute fruit throughout jam. Pour into hot sterilized canning jars, leaving 1/2 inch head space and seal. Process in water bath canner for 10 minutes.
