Grapefruit Marmalade

I use these proportions for all marmalades- orange, lemon, grapefruit, citron or a mixture of any
2lb grapefruit
2 US pints water
4 lb sugar
Slice grapefruits thinly and remove any seeds. Place in water and leave overnight. Next morning, place grapefruit and soaking water in a large pot and boil until softened. Add sugar and boil rapidly until setting point is reached. The quicker you reach setting point the lighter in color the marmalade will be. Pour into sterilized jars and seal. Process in water bath canner for 10 minutes.
If you like, you can boil the marmalade a little past setting pint and stir in 1/2 a cup of your favorite alcohol before jarring. I like to use Stone's Green Ginger Wine (no idea if you have it in the US) for grapefruit and citron, and Scotch whisky for orange.
