Hi Amanda :-) This recipe was posted by Sarah, CA. Though it doesn't have mandarin oranges in it, I wonder if you could omit the carrots and add the mandarin oranges to this recipe? It might be worth a try. At least maybe it gives you a starting point and you could "play" with this recipe. Good luck!
Curried Couscous
This is fantastic!
1 1/2 cups couscous
1 Tbsp. unsalted butter
1 1/2 cups boiling water
1/4 cup yogurt
1/4 cup olive oil
1 tsp. white wine vinegar
1 tsp. curry powder
1/4 tsp. ground turmeric
1 1/2 tsp. kosher salt
1 tsp. freshly ground black pepper
1/2 cup grated (or small dice) carrots
1/2 cup minced flat leaf parsley
1/2 cup dried currents (I used dried cherries)
1/4 cup sliced almonds (Iused a little more and toasted them first)
2 scallions sliced
1/4 cup small dice red onion
Place couscous in a medium bowl Melt the butter in the boiling water and pour over cous cous. Cover tightly and let soak 5 minutes. Fluff with fork. Whisk together yogurt thru black pepper and add to couscous mix well then add the remianing ingredients then taste for salt and pepper. Serve at room temperature.
