Recipe(tried): curried rice artichoke salad

curried rice artichoke salad

1-6oz pkg chix rice flavored rice mix
4 green onions sliced fine
1/2 green pepper, chopped
12 pimento-stuffed olives sliced
2 -6oz jars marinated artichoke hearts
3/4 teas curry pwd
1/2 cup mayo

cook rice according to pkg directions but OMIT butter; cool.

Place rice mix in lg bowl and add onions,peppers, and olives. Drain artichoke marinade into mayo and add curry;mix well. Cut artichokes in small pieces and add to rice. Add mayo and curry mix and toss well. Chill overnight or sveral hours before serving.
