Recipe(tried): Portugese Soup

Just made a copy of your pie recipe, Terry Sounds delightful. Also think it would make a wonderful ending to the below meal.

Here's a recipe of my mothers that is mighty good on a cold day. Winter's just around the corner

PORTUGESE SOUP

1 package of dried beans; kidney,pinto,navy, blackeye or garbanzo or a combination of any.
Pour 2 quarts boiling water over the beans and soak for 1 hour.
Add 2 large onions chopped, 2 small meaty bones or hamhocks.
Add 1 TBS salt. Simmer 2 or 3 hours until beans are tender.

Add 2 stalks celery, sliced
2 carrots, sliced
2 potatoes, cubed
1 small cabbage, shredded
1 Portugese, linguease, or Polish sausage, thinly sliced
1 large can tomato sauce
1 slice, or leftover ham, cubed or shredded (also use meat from the hambones)
3 tomatoes peeled and chopped OR 1 #2 can of tomatoes
garlic puree to taste

Simmer while preparing and adding vegetables then cook slowly for another 1/2 hour or so.

Serve with hot crusty bread.
This soup also freezes well.
