Recipe: Eddy's Original Red Garlic Herbed Mashed Potatoes for Joan

Side Dishes - Potatoes
Not Ruby Tuesday's, but very good!

EDDY'S ORIGINAL RED GARLIC HERBED MASHED POTATOES

5 lbs. red potatoes
3 sprigs fresh whole sweet basil
3 sprigs of whole fresh sage
1 sliced fresh leek (the light green tender part)
3 cloves fresh garlic
Generous amount of fresh parsley
salt and pepper to taste
splash of half and half
1/4 lb. (1/2 cup) salted butter


Place the potatoes and seasonings in a pot and cover with water. Bring to a boil and cook until the potatoes are soft to the touch with a fork.

When potatoes are ready drain and reserve some of the cooking water for later use.

Mash the potatoes with the skins on. Beat in the half and half and butter; add SOME of the cooking water as needed.

Serve hot with the main dish.
