Fig Preserves

My mother-in-law's recipe.

2 parts figs to 1 part sugar.

She sprinkles the sugar over the figs, lets them sit to form their own juice for about an hour.

She adds the juice of 1 lemon, brings to a boil and simmers for about 1 to 1 1/2 hours until they form a thick syrup. Example: 1 quart figs to 1 pint sugar.

Put the hot preserves in hot sterilized jars, seal, and process in boiling water bath for 10 minutes.

I use this recipe and have not had any problems.
