Recipe: Filet Steak with Mustard Glaze

Filet Steak with Mustard Glaze

4 filet steaks, 1 inch thick
Salt
Freshly ground black pepper
4 Tablespoons butter
2 Tablespoons olive oil
4 teaspoons Dijon mustard
2 Tablespoons brown sugar

Preheat broiler.

Season steaks generously with salt and freshly ground pepper. Heat butter and olive oil in a thick bottomed frying pan and saute steaks on each side until tender (3 to 6 minutes on each side for rare to well done).

Spread 1 teaspoon Dijon mustard on top of each steak; sprinkle with brown sugar.

Transfer steak to a gratin dish and glaze under preheated broiler until golden brown this will take only a short time.

Serves 4.
