Recipe(tried): Fleigh...portabello mushrooms...
Misc.Fleigh, I've made this before it really doesn't have a name...so I'll call it
Portobella Stacks!
Marinate mushrooms in olive oil, fresh crushed garlic and salt and pepper, for 1/2 an hour.
Pan sear them in a cast iron skillet or any skillet, set aside.
Then stack them with a slice of tomatoe, a leaf of basil, and a slice of fresh mozzarella. Place them in a baking dish, pierce with a toothpick.
Bake till warmed through and cheese is slightly melted.
Arrange them on the plate and drizzle with a good extra-virgin olive oil.
They are awfully delicious!
Enjoy,
Suzanne
I've also used them as above as a veggie burger!
