I was raised in the south, mountains of Kentucky, and we always cooked
green beans a long time. We snapped the beans, washed them, put them in
a pot with enough water to cover, then added a hunk of salt pork. Cooked
them till they dried down. By the way, anyone from the south that has
ever heard of Leather Britches or Shuckey Beans?
