Frozen Lemon Delight:
Serves 6
3 eggs, separated
1/2 c. sugar
1/4 c. lemon juice
rind of 1/2 lemon,cut into strips, with white part removed
1 c .whipped cream
1/2 c. vanilla wafer crumbs
Beat egg yolks in top of double boiler,add all but 1 Tbls.of the sugar,along with lemon juice & rind.Cook over rapidly boiling water for 10 minutes or till thickened,stirring constantly.
Remove rind & chill.Beat egg whites till stiff & dry.Add remaining sugar & beat till whites will hold peaks.Fold in custard & whipped cream.Lightly butter individual serving containers or 6 cup serving dish & coat thoroughly with wafer crumbs.Pour lemon mixture into serving containers & sprinkle more crumbs over top.Freeze till firm.
