Recipe: Fruity Spread

Fruity Spread
Source: Special Choice Recipes, The Complete Menu Cookbook.
Yields 2 1/2 cups

1 apple, finely chopped
1 Tbls. lemon juice
8 oz. Neufchatel (low fat) cream cheese
2 Tbls. sugar
1 tsp. cinnamon
1/2 c. raisins
1 carrot, shredded

Mix apples & lemon juice to prevent browning & set aside.

With a mixer, blend cream cheese, sugar & cinnamon. Add raisins, carrot & apple, mix well.

Store tightly covered in refrigerator for up to 4 days.
