Fudge Brownie Pie
1 c. sugar
1/2 c. butter
2 egg yolks
2 oz. baking chocolate
1/3 c. flour
1 tsp. vanilla
2 egg whites
1/8 tsp. salt
This is a brownie-like and rich dessert. It is baked, cooled and served with ice cream on top. Perfectly wonderful! Sift 1 cup sugar. Beat 1/2 cup of butter until soft. Blend butter and sugar until mixture is creamy. Beat in 2 egg yolks. Melt 2 ounces baking chocolate over hot water; cool slightly and beat in. Sift 1/3 cup flour before measuring and beat in. Add 1 teaspoon vanilla. Whip 2 egg whites and 1/8 teaspoon salt until stiff and fold into batter. Bake batter in a greased 8 1/2-inch pie plate in a slow oven at 325 degrees for about 30 minutes. Serve the pie topped with ice cream.
Brownie Pie
1 unbaked regular pie crust shell
4 sq. semi-sweet chocolate
1/2 c. butter or oleo
3/4 c. firmly packed brown sugar
1/4 c. water
2 eggs, separated
1 tsp. vanilla
1/3 c. flour
1/4 tsp. salt
3/4 c. chopped nuts (optional)
Preheat oven to 350 degrees. In saucepan, melt chocolate and butter and cool slightly. Mix water, egg yolks and vanilla. Stir into chocolate. Fold in flour and salt. Beat egg whites until stiff and fold into chocolate mixture. Stir in nuts and spread in pie shell. Bake about 30 minutes and cool completely. Can spread whipped topping on top when served.
