Recipe: Ginger Cucumber Sauce (not Earl's)

GINGER CUCUMBER SAUCE

A refreshing cucumber sauce scented with a touch of fresh ginger adds interest to a popular everyday supper.

1/2 Ontario Greenhouse Cucumber, unpeeled, diced 1/2
1 cup plain yogurt 250 mL
1 1/2 tsp minced ginger root 7 mL
Salt and pepper to taste

Stir together cucumber, yogurt, ginger, salt and pepper to taste.

Serve with hot fish cakes.

Makes 4 servings
