GLAZE FOR BLACK WALNUT CAKE
1 cup sugar
1/2 cup buttermilk
1/2 stick (1/4 cup) margarine
2 tbsp. light Karo corn syrup
1/2 tsp. baking soda
1 cup black walnuts
Combine all ingredients in a saucepan and cook slowly for 5 minutes. Add walnuts. Glaze cooled cake.
BLACK WALNUT CAKE FROSTING
2 cups sugar
2 cups milk
2 tbsp. butter
1 1/2 cups chopped walnuts
Bring sugar and milk to a boil. Add butter. Cook until icing is thick. Add chopped walnuts. Stir for 1 minute, let cool, then frost cake.
LEMON GLAZE FOR BLACK WALNUT CAKE
4 cups confectioners' sugar
1/3 cup hot water (or 1/3 cup melted butter)
1 tsp. lemon extract (or 2 tsp. lemon juice)
Combine ingredients. Drizzle over the cake and sprinkle lightly nut pieces over the glaze.
WALNUT CREAM ICING
1/4 cup butter or margarine
2 cups powdered sugar, divided use
1 tsp. vanilla
Pinch of salt
2 tbsp. heated cream
1/2 cup chopped walnuts
Cream butter until creamy; gradually add 1 cup of the powdered sugar, vanilla and salt. Then add warm cream and beat in the second cup of powdered sugar. Stir in nuts and heat until creamy.
CREAMY COFFEE ICING
4 cups sifted confectioners' sugar
4 tbsp. Crisco vegetable shortening
1/2 tsp. black walnut flavoring
1/2 tsp. vanilla
1/3 tsp. salt
2 tbsp. melted butter
2 to 3 tbsp. hot strong coffee
Combine sugar and Crisco, add flavoring, vanilla, and salt. Add butter and coffee. Beat until of spreading consistency.
