Recipe: Video: Making Peanut Brittle - Making it thin requires stretching
Desserts - Candy, ChocolateHere's a video showing the commercial manufacturing of peanut brittle. However, this is NOT Juanita's Candy Kitchen. Juanita's doesn't add salt, butter, or vanilla; and Juanita's uses more peanuts than these folks. Lastly, Juanita's has the good sense not to post a video to the world of how they make their brittle!
Making Peanut Brittle
The last half of the video shows how to stretch it thin. Notice they work quickly and they all wear heat-resistant gloves. The mixture must be hot to pull it thin, and it cools quickly. So stretch the outside first, because the outside cools fastest.
I suggest learning with a few small batches until you can get the hang of it.
