The Valrico area is growing rapidly. So many new restaurants popping up - hard to keep track of them. I remember the orange groves, and especially the strawberry field at Miller and Hwy.60. Now that strawberry season is here I plan on using them as a topping for my cheesecake for our Sat. night dinner party. Do you know of any strawberry fields open for picking yet or is it too early in the season. I want to stock my freezer with them.
My entree for Sat. will be Greek marinated Lamb chops.
Marinade:
1/2 cup olive oil
1/2 cup lemon juice
8 cloves of garlic, chopped
1/4 cup of oregano ( I used about 1/8+ cup)
1 tsp. salt and 1 tsp. pepper
2-3 tsp. rosemary.
Mix the above and pour over 12 loin lamb chops cut 1-1/2 to 1-3/4 inches thick, coating well and turning occasionally. You can also place the chops and marinade in a plastic zip lock bag, release the air, work the marinade around the chops and flip the bag every so often.
Marinate the lamb chops at least 6 hrs. but preferably overnight, then grill using the indirect heat method, about 7-10 min. per side or to your preference as to medium or well done.
Sides will be my cheese-rice loaf and steamed asparagus with lemon butter along with a salad with lemon poppyseed dressing. Have served this menu before and everyone enjoyed it.
We enjoy having small dinner parties with good friends.
