Recipe(tried): Ground up Bologna Sandwiches

My most favorite sandwich of all is ground up bologna on soft wonder bread.
Mom had this food grinder that clamped to the edge of the kitchen counter. I always turned the handle as Mom put in chunks of bologna and dill pickles.
When it was all ground up we added some mayo, enough to hold the mixture together. And then we piled it thick onto a slice of soft wonder bread,added a piece or two of lettuce put on the top slice and started eating, usually with some potato chips on the side.
I still make ground bologna today, using the grinder attachment on my kitchenaid, much faster than turning that handle. My whole family loves it including the grandkids.
Actually, I like any kind of bologna sandwich. Fried bologna with a thick slice of onion and mustard is like a gourmet lunch, and just plain sliced bologna with american cheese and lettuce is great too.
Things sure were a lot simpler back then.

The baked bean sandwich brought back memories of my Dad. Whenever Mom made baked beans, Dad would want sandwiches of just baked beans between two slices of bread in his black lunch bucket to go to work.
