Recipe(tried): Haluski (Fried Cabbage)

HALUSKI (FRIED CABBAGE)

Potato dumplings with cabbage. This is a traditional Slovak
dish that is often served on Christmas eve.

6 to 8 potatoes, peeled and blended into a paste
2 eggs, beaten
2 1/2 cups all purpose flour
2 heads cabbage, chopped into 1/4 x 1 inch strips
2 onions, chopped
1/2 lb butter
salt and pepper to taste
6 cups boiling water

Mix eggs, salt, pepper, potato paste and flour until it has a doughy consistancy. Spoon teaspoonfuls of mixture into boiling water and allow to cook for 2 -3 minutes. Scoop out with slotted spoon and allow to drain.

Salt cabbage with 1 to 2 Tablespoons of salt. Cook onions in butter until they are transluscent. Add cabbage and cook until tender on medium low heat. Add potato dumlings and simmer until warm.

Yield: About 8 servings
