Recipe: Rosy Plum Streusel Squares (Quaker Oats, 1991)

ROSY PLUM STREUSEL SQUARES

FOR THE CRUST AND STREUSEL:
1 3/4 cups Quaker Oats (Quick or Old Fashioned, uncooked)
1 1/2 cups plus 1 tablespoon all-purpose flour, divided use
3/4 cup plus 2 tablespoons sugar, divided use
1 teaspoon baking powder
3/4 cup (1 1/2 sticks) margarine, melted
1/4 teaspoon almond extract (optional)
FOR THE FILLING:
2 cups thinly sliced plums (about 3 to 4 medium)
1/3 cup raspberry preserves

Heat oven to 375 degrees F.

TO MAKE THE CRUST AND STREUSEL:
Combine oats, 1 1/2 cups flour, 3/4 cup sugar, and baking powder; mix well. Add combined margarine and almond extract, mixing until moistened. Reserve 1 1/2 cups; set aside. Press remaining oat mixture onto bottom of 9x9-inch square baking pan.

Bake 15 minutes.

TO MAKE THE FILLING:
Combine plums, the remaining 2 tablespoons sugar and the remaining 1 tablespoon flour. Stir in preserve

Spread the filling onto crust to within 1/2-inch of edge. Sprinkle with reserved oat mixture.

Bake 25 to 28 minutes or until golden brown.

Makes 16 bars
