Recipe: Huevos Chilaquiles (Eggs Baked with Tortillas) for Dave

Huevos Chilaquiles (Eggs baked with Tortillas)
Servings: 4

4 cups corn tortilla chips
8 eggs beaten
1 cup Hot salsa
1 cup shredded Chihuahua or Monterey Jack cheese
1 cup sour cream
1 teaspoon coarsely ground pepper
1 SPAM Classic (12-ounce) can cut into 1/2-inch cubes (or cooked & shredded chicken breast)

Heat oven to 350F. Place chips in 13x9-inch baking dish. In bowl, combine remaining ingredients; pour over chips. Bake 25 to 30 minutes or until egg is set.
