Recipe: Huevos Poblanos
Breakfast and BrunchHUEVOS POBLANOS
10 to 12 eggs
Mrs. Dash Seasoning
1/4 cup minced dried onion
2 Tablespoons chopped parsley
24 ounces creamed cottage cheese
4 ounces canned chopped chilies
1/2 pound cooked bacon, crumbled
1 cup grated cheddar cheese
1/2 cup crushed tortilla chips
Preheat oven to 350 degrees F. Spray a 9x13 pan with cooking spray.
In a large bowl, whip eggs until frothy. Sprinkle 2-3 shakes of Mrs. Dash Seasoning on top. Stir in onions and parsley. Blend in each of the remaining ingredients. Pour into prepared pan.
Bake uncovered, 45 to 50 minutes.
Variation: Omit bacon and stir in 9 ounces of cooked turkey, breakfast sausage or ham.
Serves 6 to 8
