HONEY-ORANGE CHICKEN
1 cup fine dry bread crumbs
1 Tablespoon grated orange zest
1 teaspoon salt
1/4 teaspoon pepper
1 broiler-fryer, about 3 pounds, cut up; or 3 pounds chicken thighs; or 2 large game hens
1/2 cup orange juice
1/2 cup chicken broth
1/4 cup butter
1/2 cup honey
hot cooked rice (to serve)
Preheat oven to 350 degrees F.
Mix bread crumbs, orange zest, salt and pepper. Dip chicken pieces in crumb mixture. Arrange skin side up in a greased shallow pan.
Bake uncovered for 30 minutes.
Combine remaining ingredients and heat until butter is melted. Pour over chicken.
Bake, basting occasionally with pan juices, 30 minutes longer.
Serve with rice.
