FIVE-VEGETABLE SLAW
4 cups finely shredded green cabbage
1/2 cup thinly sliced red bell pepper
1/2 cup thinly slice green bell pepper
1/2 medium cucumber-peeled, halved lengthwise, seeded and thinly sliced
3 scallions, thinly sliced on the diagonal
1/3 cup mayonnaise, preferably homemade
1 Tablespoon cider vinegar
1/4 teaspoon sea salt
1/4 teaspoon freshly ground black pepper
In a large bowl, toss together the cabbage, peppers, cucumber and scallions. Mix in the mayonnaise, vinegar, salt and pepper. Cover and refrigerate for up to 2 days before serving.
