Kruchiy (Ukrainian pastry)
rec.food.cooking/Cynthia Sanoy (1993)
(pronounced kroo chi, with the oo like in moon, and i like in fin.)
a rich, fried Ukrainian pastry. This is a recipe that has been in my family for quit a while. Being a family-passed-down kind of recipe, quantities may not be exact, so experimenting may be required. My great grandmother probably would not have had access to vanilla, and definitely would have used lard for frying.
1 cup sour cream
12 large egg yolks
1 tsp salt
1 cup white granulated sugar
1 tsp vanilla
1 tsp baking powder
white flour
vegetable oil for deep frying
powdered sugar for sprinkling
Combine the first six ingredients.
Add enough flour to make a rollable dough.
Roll flat, 1/2 inch thick.
Cut into strips, 1 inch wide and 3-4 inches long.
Tie each strip into a simple knot.
Deep fry until golden brown.
Sprinkle with powdered sugar.
