Fresh Uncooked Applesauce:
Number of servings:4-6
3 red skinned apples
1/2 tsp.salt
1 qt.water
1 Tbls.lemon juice
1/4 tsp.cinnamon or nutmeg
1/4 c.honey(or more to taste)
Thinly slice cored,peeled(or unpeeled if preferred)apples into salted water.Let stand 15 minutes to prevent discoloration.
In blender(or food processor),combine lemon juice,spice & honey with 1/2 of apple slices.Run blender to mix,adding remaining apples & mixing till all has been blended to as smooth a sauce as desired.
Chill before serving.
Note:
Uncooked applesauce may be prepared using a medium grater.Also a tasty pear sauce may be made by substituting ripe hard type pears for apples.
