Recipe(tried): Lemon-Rosemary Broiled Fish, Fish Rolls Primavera, Fisherman's Fillets, Oven Fried Fish

The tilapia dish that I made wasnt a per se "stuffed" recipe but rather has a crumb topping, we really like it tho :)


Lemon-Rosemary Broiled Fish

1/2 cup margarine or butter, melted
1/4 cup lemon juice
2 cups fresh bread crumbs (4 slices)
1 tablespoon chopped parsley
generous pinch dried rosemary (crushed between your fingers to break up)
1/2 teaspoon paprika
1 lb fish fillets

In a small bowl, combine butter and lemon juice. In a medium bowl, combine crumbs, parsley, rosemary & 1/4 cup butter mixture. Add paprika to remaining butter; brush fillets with butter. Broil until fish flakes with fork; top each fillet evenly with crumb mixture. Return to broiler; broil until heated thru and browned.


This is more of a "stuffed" type dish --

Fish Rolls Primavera
Serves 4

1 cup shredded carrots
1 cup shredded zucchini
2 tablespoons finely chopped onion
1/2 cup fresh bread crumbs (1 slice)
1/8 teaspoon thyme leaves
1/4 cup butter or margarine, melted
1/4 cup lemon juice
1 fish fillets (about 1 lb)

Preheat oven to 375. In medium bowl, combine vegetables, crumbs & thyme. In small bowl, combine butter and lemon juice; add 1/4 cup to vegetable mixture. Place equal amts of vegetable mixture on fillets; roll up. Place seam side down in shallow baking dish; pour remaining butter mixture over fish. Bake 15 minutes or until fish flakes with fork.


Fishermans Fillets
4 servings

1/2 cup your favorite Italian salad dressing (an oil type NOT creamy)
1 small green pepper, cut into strips
1 small onion, thinly sliced
1 lb fish fillets
1 medium tomato, coarsely chopped
Hot cooked rice

In a large skillet, heat salad dressing and cook green pepper and onion over medium heat, stirring occasionally 5 minutes (or till tender). Add fish and tomato, simmer cover 10 minutes more (or until fish flakes).

Serve over hot rice.


Oven "Fried" Fish

2-1/2 cups finely crushed potato chips
1/2 cup grated parmesan cheese
2 tablespoons chopped parsley
1/2 cup mayonnaise or salad dressing
1/4 cup lemon juice
1 lb fish fillets

Preheat oven to 400. Combine chips, cheese & parsley. In a small bowl, combine mayonnaise and 2 tablespoons lemon juice. Dip fish in remaining 2 tablespoons lemon juice, then mayonnaise mixture, then into chip mixture. Arrange in greased (foil lined is best for easy clean up) baking dish. Bake 10 minutes or until fish flakes with fork.
