Recipe: Macaroni Loaf (using cheese and fresh bread crumbs, 1960's)

MACARONI LOAF

2 cups cooked macaroni
1 cup soft bread crumbs (crusts removed)
1 cup hot milk
1 small jar pimiento, chopped
3 eggs, beaten
1 1/2 tsp. onion juice
1 tsp. salt
1/4 cup butter, melted
1 cup shredded cheese
1/8 tsp. ground black pepper
Meat sauce (your favorite recipe, for serving)

Mix all ingredients except meat sauce together in order given. Place in a buttered loaf pan. Place the loaf pan in a pan of shallow water in the oven.

Bake 1 hour at 350 degrees F. Remove from pan and allow to stand for 8-10 minutes.

Slice and serve with meat sauce.

If you have any left, refrigerate then slice and saute for lunch.
