Recipe(tried): Mango-Kiwi Chutney

Mango-Kiwi Chutney

1 tsp. butter
1/2 medium onion, finely chopped
1/3 cup brown sugar
1 1/2 tsp. curry powder
1/3 cup sherry vinegar
1 cinnamon stick
1/2 tsp. cayenne
1/4 cup dried cranberries
3 Tbls. almond slivers
3 mangoes, peeled, seeded and finely chopped
4 kiwi, peeled and finely chopped

Place the butter and onion in a heavy saucepan over medium heat and stir until the onion softens slightly. Add the sugar, curry, vinegar, cinnamon, cayenne, and cranberries. Cook the mixture for 10 minutes. Stir in the almonds, mangoes and kiwi and cook for 3 minutes. Remove from heat and let cool. Discard the cinnamon stick and put the mixture in a container with a tight fitting lid. Refrigerate until ready to use.
