My daughter phoned me yesterday and said "Mom, I'm so hungry for Grandma's pork chops-how did she make them." That made me hungry for them and we are having them tomorrow night also. Sometimes we forget about the old favorites.
Mom' Stove Top Mustard Pork Chops
4-6 pork chops (about 1" thick")
2 Tbsp. shortening
Seasoned flour-salt, pepper and your favorite spices (I like onion and garlic powder and some poultry seasoning)
Prepared yellow mustard
1 can condensed cream of chicken soup
1/2 can water
1 (4oz.) can sliced mushrooms, drained
Spread chops generously with mustard. Dredge in seasoned flour. Brown chops,to golden,in shortening. Mix soup with water and pour over browned chops. Add mushrooms. Bring to a boil and then reduce to simmer. Cover and simmer for about 1 hour-they will be very tender. We like to throw a few peeled potatoes into the sauce/gravy for a 1 pan meal. Do not get frantic if some of the flour coating falls off-just mix it into the gravy. Delicious.
