Recipe(tried): Muffaletta Olive Salad Mix

The Muffaletta sandwich itself is made with a large loaf of round Italian bread, split in half, and filled with whatever type of Italian sandwich meat you like. Usually it is made with Genoa Salami, Hard Salami, Mortadella, Ham or better yet, something like Parma Ham. Add to this Provalone cheese, or some other type or several types of Italian cheeses. Fresh Mozzerella, would be another. But, the key ingrediant to a good Muffaletta is the Olive Salad mix. You make up the sandwich with all the meats and cheeses, wrap it in foil, and toast it in the oven. Then unwrap it and add the olive salad mix and serve. There are two recipes for that below, both from a long time ago.
Here are two different ones. Neither is exactly like what you described, but both seem reasonably close.
The first one is Elly's recipe and the second one is mine. Hope one of them works for you.
OLIVE SALAD (To be made the day before you want to serve it)
3 large garlic cloves, crushed
1 cuo chopped pimento stuffed olives
1 cup pitted and chopped black ripe olives or calamatas
1/2 cup roasted sweet red peppers cut unto small chunks
1 cup olive oil
3 Tbsp. chopped fresh parsley
2 Tbsp. white wine vinegar
Mix all of the above and let stand overnight. Need not be refrigerated for the first night.
Italian Olive Salad mix
1 large jar salad olives
1 large can black olives (or use kalamata olives from deli)
1 jar mairnated artichoke hearts
1 jar capers
1/2 bunch celery- chopped with leaves
1/2 cup chopped fresh Italian parsely
1 tsp. garlic powder
1 tbs. dried oregano
1/2 cup olive oil
