Recipe(tried): One Night in Bangkok Salad with Thai Style Ginger Lime Dressing

Salads - Potato, Pasta
ONE NIGHT IN BANGKOK SALAD

1/4 cup unsalted sunflower seeds (I use lightly toasted pine nuts)
1/4 cup unsalted peanuts
2 cups of mixed shredded carrots, zucchini, & yellow squash (I use cole slaw mix from the supermarket)
1/2 cup julienned red peppers
1 cup shredded Parmesan
1/2 (12 ounce) package of cooked pasta (recipe uses cooked linguini)

Toss all ingredients together & mix with Thai Ginger dressing (recipe follows). Chill in refrigerator for a couple of hours before serving.

Thai Style Ginger Lime Dressing:

3 tablespoons lime juice
2 tablespoons rice wine vinegar
3 tablespoons peanuts
1 piece ginger, grated
1 small red chiles, minced
2 tablespoons soy sauce
1 tablespoon brown sugar
1 tablespoon coriander, or mint
2 tablespoons water

Place all ingredients in a blender or food processor and process until thoroughly smooth.
